Mexican restaurant slated to open in Saco by May

SACO — Taco fans will have to be patient. A much-anticipated Mexican restaurant will be opening a bit later than originally anticipated.

Karen Rasmussen and Manny Pena, owners of the popular South Portland restaurant Taco Trio, said in January that they were opening a restaurant in Saco, at 27 Elm St., the site of the former Skippers Seafood and Rotisserie restaurant.

The two said earlier this year they intended to open the Saco restaurant in March. However, in a recent social media post, they said they didn’t have a definitive opening date due to delays with contractors, but were hoping to open the Elm Street restaurant by May.

 

Rasmussen and Pena said in January that the Saco restaurant will be similar to the South Portland restaurant, but will have a more extensive food and drink menu and also offer breakfast.

Taco Trio at 119 Ocean St., South Portland offers a wide selection of tacos and burritos as well as other items. All traditional taco fillings and salsas are made every day by hand in small batched using fresh ingredients, according to the restaurant’s website. Included on the menu are vegetarian, vegan and gluten free options.
