BIDDEFORD — A Mexican restaurant will soon be opening in the old Denny’s location.

In May two Denny’s restaurants in Maine closed –  one at 45 Boulder Way at the Mailhot Plaza in Biddeford and one in Ellsworth.

Kenebunk restauranteur Sergio Ramos is opening a restaurant at the Boulder Way building in the next couple of weeks, he said. The restaurant, Mi Pueblo Taco Y Tequila, will be a casual restaurant serving authentic Mexican food, he said. He plans to have about 25 to 30 items on the menu, including tacos, burritos and enchiladas.

The City Council on Tuesday night approved a liquor license for the business.

Ramos said he has been in the restaurant business for 34 years, and has worked at both national chain and independently owned restaurants.

He said he chose Biddeford to open the restaurant because he thinks the area is ripe for a new Mexican restaurant.

Also, he knows the layout of the 5,000 square foot building at 45 Boulder Way very well, because he was once the manager of a Ruby Tuesday’s restaurant that was at that location before Denny’s.
