BIDDEFORD — Round Turn Distilling has just released Bimini Coconut gin.

Round Turn Distilling is located in the Pepperell Mill Campus at 32 Main St., Building 13w, Suite 103. Kristina Hansen and her husband, Darren Case, launched the business in 2015 in the former textile mill.

The Bimini Coconut gin’s natural coconut flavor is added through a fat-washing process. Through this process, organic, Fair Trade Certified, extra virgin coconut oil is heated to a liquid state and added to gin. The mixture is chilled until the coconut is solid and can be strained out, according to a press release from Round Turn.

“Bartenders have been fat-washing gin with coconut for years, but it’s a labor-intensive process,” said Hansen in a written statement. “We decided we could make their jobs a little easier by doing the work for them and, at the same time, introduce this delicious flavor combination to the home bar.”

Unlike other flavored gins on the market, Bimini is made without using flavor extracts, according to Hansen and Case. It has a neutral base spirit made from non-GMO American corn distilled four times for exceptional purity. The water used to make the gin comes from the Saco River.

“We created Bimini Gin to capture the taste of summer vacation in Maine,” said Case in a written statement. “Bimini Coconut is a nod to the tropical daydreaming that gets us through the rest of the year.”

Bimini Coconut is available at local retailers on both coasts. It is also available as for online purchase in 41 states at biminigin.com. Check website for more details.
